Ingredients
Main
- 1 medium yellow potato, diced small
- ½ turkey sausage, sliced
- Handful spinach, bell pepper, onion
- Pinch salt and pepper, small splash oil

Instructions

Prep potato
Dice potato small so it cooks fast.

Heat oil
Heat pan with a small splash of oil.

Start potatoes
Add potatoes first.

Steam
Cover with lid and steam 4–5 minutes.

Brown sausage
Remove lid and add sliced turkey sausage. Cook until potatoes and sausage brown.

Add aromatics
Add onion and bell pepper for 1–2 minutes.

Finish with greens
Add spinach last and stir until wilted.
