Ingredients

Chicken & seasoning

  • 1½ lb chicken breast or thighs
  • 1½ tsp salt, 1 tsp black pepper, 1 tsp garlic powder
  • 1 tsp paprika, ½ tsp thyme or Italian seasoning
  • 1 tbsp olive oil, 4 cloves garlic, minced

Gravy

  • 1½ cups chicken broth
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp Dijon mustard, 1 tsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water slurry

Optional sides

  • Green beans, carrots, broccoli, baby potatoes, or rice

Equipment

Instructions

  1. Season chicken

    Season chicken with salt, pepper, garlic powder, paprika, and thyme/Italian seasoning.

  2. Heat the pan

    Heat olive oil in a large pan over medium heat.

  3. Sear chicken

    Sear chicken 4–6 minutes per side until browned and cooked through, then remove from pan.

  4. Cook garlic

    Add minced garlic to the same pan and cook 30 seconds.

  5. Add liquids

    Add chicken broth, soy sauce/coconut aminos, Dijon mustard, and lemon juice.

  6. Deglaze

    Stir and scrape the pan.

  7. Thicken gravy

    Add cornstarch slurry and simmer until gravy thickens.

  8. Coat chicken

    Return chicken to the pan and coat with gravy.

  9. Serve

    Serve with roasted vegetables, rice, or potatoes.

Storage and reheating

  • Refrigerate chicken and gravy together within 2 hours.
  • Reheat until chicken reaches 165°F.
