### How to Cook

1. Heat pan on medium with a small amount of oil.
2. Scramble egg for 30–60 seconds, then push to the side.
3. Add beans, peppers, and onion. Warm for about 1 minute.
4. Add spinach and let it wilt.
5. Place tortilla in pan.
6. Add filling and cheese.
7. Fold tortilla in half.
8. Cook 2–3 minutes per side until golden.

## Turkey Sausage, Potato & Greens Skillet

**Hearty, clean, 8–10 minutes**

### Ingredients — 1 serving

- 1 medium yellow potato, diced small
- ½ turkey sausage, sliced
- Handful spinach
- A few slices bell pepper
- Some onion
- Pinch salt and pepper
- Small splash oil

### How to Cook

1. Dice potato small so it cooks fast.
2. Heat pan with a small splash of oil.
3. Add potatoes first.
4. Cover with lid and steam 4–5 minutes.
5. Remove lid and add sliced turkey sausage.
6. Cook until potatoes and sausage brown.
7. Add onion and bell pepper for 1–2 minutes.
8. Add spinach last and stir until wilted.

#### Pan Gravy — Dairy-Free

- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1½ cups chicken broth
- 1 tbsp soy sauce or coconut aminos
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water, mixed as slurry

#### Sides

- Green beans, carrots, or broccoli
- Baby potatoes or rice
- Olive oil
- Salt
- Pepper

### How to Cook

1. Season chicken with salt, pepper, garlic powder, paprika, and thyme/Italian seasoning.
2. Heat olive oil in a large pan over medium heat.
3. Sear chicken 4–6 minutes per side until browned and cooked through, then remove from pan.
4. Add minced garlic to the same pan and cook 30 seconds.
5. Add chicken broth, soy sauce/coconut aminos, Dijon mustard, and lemon juice.
6. Stir and scrape the pan.
7. Add cornstarch slurry and simmer until gravy thickens.

### Instructions

2. Add onion, garlic, and pepper. Cook 3–4 minutes.
3. Add beans, corn, seasoning, and broth. Simmer 5–7 minutes.
4. Serve in tortillas, rice bowls, or lettuce cups.
5. Top with avocado, salsa, cilantro, and lime.

## Protein Egg Muffins

### Ingredients

- 10 large eggs
- ½ cup milk, dairy or unsweetened almond milk
- 1 cup fresh spinach, chopped
- 1 cup bell peppers, diced
- ½ cup onion, diced
- 1 cup cooked lean protein: diced chicken breast, ground turkey, turkey sausage, or black beans
- ½ cup shredded cheese, optional
- 1 tsp garlic powder
- 1 tsp smoked paprika, optional
- Salt and black pepper, to taste
- Cooking spray or olive oil for muffin tin

### Instructions

1. Preheat oven to 350°F.
2. Grease a 12-cup muffin tin with cooking spray or olive oil.
3. In a large bowl, whisk eggs, milk, garlic powder, paprika, salt, and pepper.
4. Stir in spinach, peppers, onions, protein, and cheese if using.
5. Pour mixture evenly into muffin cups, filling about ¾ full.
6. Bake 20–25 minutes until set in the center and lightly golden on top.
7. Let cool, then store in an airtight container in the fridge for up to 5 days.
8. Freeze for up to 2 months if needed.

### Reheating

- From fridge: microwave 30–45 seconds.
- From frozen: microwave 1–2 minutes wrapped in a damp paper towel.

### Ingredients

#### Veggies

- 2 medium sweet potatoes, diced
- 1 head broccoli, cut into florets
- 1 head cauliflower, cut into florets
- ½ lb Brussels sprouts, halved
- 2 large carrots, sliced
- 1 large red onion, sliced

#### Grain Base

- 2 cups quinoa, dry  
  Or brown rice if preferred.

#### Protein

Pick one or mix:

- 1½ cans chickpeas, drained and rinsed

Or:

- 1 lb chicken breast, cubed and roasted with veggies

#### Seasoning & Oil

- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste

#### Optional Add-Ons

- Salsa
- Hot sauce
- Tahini
- Balsamic glaze
- Hummus

### Instructions

#### 1. Cook the Grain

- Rinse quinoa or rice.
- Cook 2 cups dry to yield about 6 cups cooked.
- Set aside.

#### 2. Roast Veggies & Protein

- Preheat oven to 400°F.
- Spread veggies and chickpeas or chicken on 1–2 sheet pans.
- Drizzle with oil and seasonings.
- Toss well.
- Roast 25–30 minutes, stirring halfway, until golden and tender.

#### 3. Assemble Bowls

- Divide grain into 7 containers, about ¾–1 cup each.
- Add a generous scoop of roasted veggies and protein.
